Mixology
Location: White Pines Resort, Sycamore Room, 6712 W. Pines Rd., Mt. Morris, Ill.

This three-hour course is an introduction to the basics, and some of the finer points, of bartending and mixing. Fully hands-on and interactive, students will have the opportunity to practice and prepare real cocktails, drinks, and shooters. While designed for beginners or those with a basic understanding of bartending and alcohol in general, the course will also have tips and pointers for more experienced bartenders. The course focuses on four key areas:
- Bar Essentials — Equipment and Setup-The tools and instruments needed to prepare most drinks and how to use them-Proper care and sanitation.
- Bar Essentials — Alcohol, Mixers and Garnishes; the essential alcohols any bartender should have, as well as what to put with them.
- Cocktails and Mixing-Will include how to make specific classics such as the Manhattan, Old Fashioned, Mojito and Martini, and also general guidelines on flavor combinations-Includes practice shaking, stirring, layering and pouring.
- Beer and Wine — General guidelines on serving, including pouring, proper temperature, storage and glassware, and includes information on current trends and distinguishing between the many varieties. After the conclusion of the class, students will have the opportunity to sample some of the drinks created. Must be age 21 or older.
Women’s Self Defense

Come and learn some mental and physical strategies for keeping you and your loved ones safe. Topics include, but not limited to: Self-defense targets 101, awareness/alertness, adduction vs. abduction, emergency responses, strangers vs. strange/uncomfortable people, and whole body movement.
Sewing/Tailoring

Non-sewers, beginners, intermediate, and advanced sewers are welcome to learn how to sew from the Master Tailor-Designer Eric W. Stiles Sr., former top Supervisor and Head Tailor-Fitter for Giorgio Armani, Polo Ralph Lauren, and others. Stop making “home-made looking” clothing, learn how to make clothes like the professionals. In this class, we will cover the machine set-up and two types of seams. It’s highly recommended to take the Sewing/Tailoring and the Pattern Making classes together to enhance and maximize your skills. No sewing experience is required. Materials list will be provided before the first day of class. (Supplies are not included in the price of the course). You will need to bring your sewing machine to class.

Pennsylvania Amish Lands Excursion for Individual and Couple

Join us on a trip to Lancaster, PA to experience the sights, sounds, and tastes of the Amish Countryside on this 5-day, 4-night adventure. This trip is planned and offered by Adventure Safari Network, in conjunction with Highland Community College Lifelong Learning. Highlights of the trip include: visit University of Notre Dame, dinner at Lancaster County’s largest smorgasbord “Shady Maple”, guided tour of the Amish Countryside, live performance of the musical stage adventure “Jesus” at “Sight and Sound’s Millennium Theatre”, visits to country stores, a miniature horse farm, and Kitchen Kettle Village. Plus, plenty of time for individual shopping and dining.
